Lazy Dinner

One of us was lazy, but we will not be mentioning names. This is one of the easiest recipes ever. You can have it as a snack or lunch or in our case dinner. It’s also super low carb and meat free.

Ingredients:

1 large Sweet potato
1 Avocado
Salt and Pepper for seasoning
Chilli flakes

Method:

Pre-heat the oven on 180 degrees
Wash and slice the sweet potato flat, pieces about 1cm thick.
Place the sweet potato on a baking sheet in the baking tray and bake for 10 minutes, or until cooked but not mushy.
Mash the avocado and put salt and pepper to season.
When your sweet potato is done spread the avo mash on top and sprinkle the chilli flakes.

That’s it and you can enjoy your sweet potato avo sandwich.
